School of Rock: Rock & Roll Chicken Drumsticks

By Aubrey Johansen

If the secret to Rock & Roll is fame and glory, then the secret to rock & roll chicken drumsticks are a little bit of sweet and a little bit of heat.

Welcome to class! Today we’re talking drumstick technique, chicken drumsticks, that is. We’re baking these drumsticks until golden brown, and dousing them with a sweet & spicy glaze, which, don’t worry, won’t be “too hot for you”.

The glaze gets its kick from both buffalo sauce & sriracha, which adds a spicy garlic flavor to the vinegar based hot sauce, making for a really complex bite. Sweeten the heat by adding some honey, which caramelizes and glazes the drumsticks while they cook! Sticky perfection!

If you don’t like it hot, you can cut the hot sauce measurements in half to ensure there’s no crying in rock and roll. Let’s dig in!

Rock & Roll Chicken Drumsticks
Serves 4

8 chicken drumsticks
1 tablespoon olive oil
S&P to taste
scallions, thinly sliced

Sweet & Spicy Glaze
2 tablespoons honey
2 tablespoons spicy brown mustard
2 tablespoons sriracha
2 tablespoons buffalo sauce

1. Preheat oven to 425. Line a baking sheet with parchment, and lay drumsticks evenly on tray. Drizzle with olive oil, and season with salt and pepper. Bake for 30 minutes.
2. While drumsticks are baking, combine ingredients for glaze. After 30 minutes, pull drumsticks from the oven, brush with generous amounts of glaze, and bake for an additional 15-20 minutes, until glaze is golden brown and bubbly on the chicken.
3. Drizzle any remaining sauce over chicken, and sprinkle with thinly sliced scallions! Serve as is, or with a big garden salad for dinner. Enjoy!

Be sure to get your drumstick lesson in while School of Rock is in town! Catch it at Playhouse Square, March 5th through the 24th. Rock on!
